Alcoholic Beverages based on Ayurvedic Literature

In Vedic literature, we come across the term ‘mad’ meaning incognizant or having false pride and ego. The entities that are called mad are termed as ‘madkari’, it is defined as the state of dependence in relation with a person, beverage or alcohol. The madkari entity reaches the quality of ‘tama’ which means inebriation, inertia and comatose. Those entities are termed as ‘madya’ or intoxicants.

According to Rigved, Madya is divided into two words which is first ‘som’, meaning to consume during rituals and ceremonies. Second is ‘sura’, meaning to be consumed only for pleasure. In addition, both words find their origin through the root word ‘su’. Which in context, means to press or to distill.

They have found 84 types of Madya in the different ayurvedic literature. But we can differentiate it based on the ingredients and the fermentation process. One made from sugars, one made from fruits, grains, herbs, vinegar, medicated wine, and triyoni (flour + honey + jaggery).

Single Malt Whisky

According to Dr. Sumit Kesarkar, single malt whisky has more health benefits compared to other wines and beers especially when aged.

The single malt whisky is a type of Scotch whisky. It is made from malted barley and is distilled in Scotland. Scotch whisky is produced with a single distillation process. The liquid left after the distillation, known as wash, is returned to the stills in order to be captured and condensed again, which gives Scotch whisky its characteristic taste.

Single malt whisky is a type of Scotch whisky that has no added sugar or preservatives. It is distilled specifically from the mash of malted barley, which gives it its distinctive taste.

The main benefit of single malt whisky is that it has antioxidant properties and helps to prevent the aging process in the body. It also has a strong flavor and aroma, which are desirable characteristics for any brand of whisky.

The Process

The malt is milled using a process called “glutting” that involves leaving the grains in their natural state of un-milled particles. The amount of time spent in the kiln varies depending on the specific type, but ranges from three to four weeks. The mashing (the water and grain interaction) takes place at between 80 and 110 °C (176 and 212 °C). The first fermentation takes place at around 35-40 °F/2-3 °C.

The subsequent fermentation is done at around 55–65 °F (-15 ~ -20° C) for two to three months, with the temperature varying from 40 to 60 °F/4~10°. When the whisky reaches optimal temperatures, it is moved to the cask. Depending on the style and packaging, keeping the whisky in bourbon casks for three years can give a good indication of how well matured it is.

The distillation process begins at 57-62 °C (135-144 °F). A series of stills are used to distill the spirit down until it reaches its final proof level. The distillation is carried out at between 78 and 92 °F (25 to 28° C). The whisky is then moved back into the barrel, where it will spend another year or more in a storage system, as well as being bottled at around 90% of its final proof.
