Recipe # 1: Spicy Lentil Soup

Ingredients:

-One cup of brown lentils, soaked overnight

-One onion, chopped

-Three cloves of garlic, minced

-One inch piece of ginger, minced

-One teaspoon cumin seeds

-One teaspoon turmeric powder

-One teaspoon red chili powder

-Salt to taste

-Two tablespoons olive oil or ghee

-Six cups of water

Recipe # 1: Spicy Lentil Soup

Instructions:

In a large pot, heat the oil or ghee over medium heat. Add the cumin seeds and let them fry for a minute until they are fragrant. Add the onions, garlic, and ginger, and cook until the onions are translucent. Add the lentils, turmeric, chili powder, and salt. Stir well and add six cups of water. Bring to a boil and then reduce the heat to low. Cover the pot and let the soup simmer for 30 minutes. Serve hot with some freshly-baked bread on the side. Enjoy!

Recipe # 2: Quinoa Vegetable Pilaf

Ingredients:

-One cup quinoa, rinsed and drained

-One onion, chopped

-One carrot, diced

-One celery stalk, diced

-Half a cup of green peas

-Three cloves of garlic, minced

-One teaspoon cumin seeds

-One teaspoon coriander powder

-Salt to taste

-Two tablespoons olive oil or ghee

-Two cups of water

Instructions:

In a large pot, heat the oil or ghee over medium heat. Add the cumin seeds and let them fry for a minute until they are fragrant. Then, add the onions, garlic, and ginger, and cook until the onions are translucent. Add the quinoa, carrot, celery, green peas, cumin powder, coriander powder, and salt. Stir well and add two cups of water. Bring to a boil and then reduce the heat to low. Cover the pot and let the pilaf simmer for 20 minutes. Fluff with a fork and serve hot. Enjoy!

Recipe # 3: Detoxifying Green Smoothie

Ingredients:

-One cup spinach leaves

-One cup kale leaves

-Half a cucumber, diced

-One celery stalk, diced

-One green apple, diced

-Juice of half a lemon

Recipe # 4: ChickPea Patties

Ingredients: 

-One can chickpeas, drained and rinsed 

-One onion, diced 

-Three cloves garlic, minced 

-One teaspoon cumin powder 

-One teaspoon coriander powder 

-Salt and pepper to taste 

-Two tablespoons olive oil or ghee 

-One egg, beaten (optional) 

-One cup bread crumbs (optional)

Instructions:

In a large bowl, mash the chickpeas with a fork or potato masher. Add the onions, garlic, cumin powder, coriander powder, salt and pepper, and mix well. Heat the oil or ghee in a large skillet over medium heat. Scoop ¼ cup of the mixture into the pan and flatten it out to form a patty. Fry for two minutes per side, or until golden brown. Repeat with the remaining chickpea mixture. If desired, you can coat the patties in egg and bread crumbs before frying. Serve hot with your favorite dipping sauce. Enjoy!

Recipe # 5: Cardamom Tea

Ingredients:

-One cup water 

-One green cardamom pod 

-One black tea bag 

-Milk and sugar to taste (optional)

Instructions:

Bring one cup of water to a boil. Add the cardamom pod and let it steep for five minutes. Remove the cardamom pod and add the tea bag. Let the tea steep for three minutes. Remove the tea bag and add milk and sugar to taste, if desired. Enjoy!
